How it works
HPP
Technology
High Pressure Food Preservation
High Pressure Processing (HPP) is one of the most advanced technologies for food preservation. Instead of using heat or preservatives, HPP relies on pure water and extremely high pressure to keep products safe, fresh, and of the highest quality.
The result: maximum food safety with minimal alteration.
The Principle Behind HPP
HPP is based on a simple yet highly effective physical principle
Pressure is applied evenly and penetrates the entire product—regardless of its shape or size.
Pressures of up to 6,000 bar are used. For comparison: This is roughly equivalent to the weight of three jumbo jets applied to the surface area of a smartphone.
Unlike conventional pasteurization, the temperature remains low. No heat. No additives. No loss of quality.
