High Pressure Food Preservation

High Pressure Processing (HPP) is one of the most advanced technologies for food preservation. Instead of using heat or preservatives, HPP relies on pure water and extremely high pressure to keep products safe, fresh, and of the highest quality.

The result: maximum food safety with minimal alteration.

The Principle Behind HPP

HPP is based on a simple yet highly effective physical principle

Pressure is applied evenly and penetrates the entire product—regardless of its shape or size.

Pressures of up to 6,000 bar are used. For comparison: This is roughly equivalent to the weight of three jumbo jets applied to the surface area of a smartphone.

Unlike conventional pasteurization, the temperature remains low. No heat. No additives. No loss of quality.

The Process at a Glance

Pack

Ideal for juices, sauces, meat, seafood – and many other foods where freshness really matters. Products are sealed in their final, flexible packaging before entering the HPP process.

Load

The packaged food is placed into baskets, which are then transferred into the high-pressure vessel. After the vessel is securely closed, it is completely filled with water, ready for the pressure cycle to begin.

Pressurize

Using our proven high-pressure pumps, the water is pressurized to 6,000 bar. The pressure is transferred instantly and evenly throughout the product, regardless of its shape or size. 6,000 bar. Precisely controlled. From every side.

Inactivate

The enormous pressure inactivates harmful microorganisms while preserving the food’s fresh characteristics. Taste, color and texture remain remarkably close to the original product.
No heat. No chemicals. Just pressure.

Depressurize

After just a few minutes, the pressure is carefully released—the product remains unchanged and ready for immediate use.

Enjoy freshness

The result is safe, fresh-tasting food with a significantly extended shelf life – with no need for preservatives. Longer-lasting freshness means greater flexibility throughout the supply chain and helps reduce food waste.
More freshness. More shelf life. Less waste.
